Sweet Potato Protein Snack:

Ingredients:
  • 1 sweet potato, sliced thin, longwise
  • 1/2 cup of cottage cheese (our favorite brand is Good Culture, whole milk)
  • Berries (you can try blueberries, strawberries, raspberries or even all 3!)
Spread the cottage cheese on the “slice” of sweet potato and then top with your fruit.  Put in the air fryer (or oven) at 400 degrees for 7 minutes or until the sweet potato is to your texture.

Buffalo Chicken Over Coleslaw:

  • 1 Tbsp (no sugar) Buffalo Sauce (we love either Noble Made or Primal Kitchen brands) per 4 oz of Chicken, cooked low all day in the crockpot
  • 18 oz of shredded cabbage (or coleslaw precut)
  • 2 Tbsp Avocado Mayo (Primal Kitchen or Sir Kensington brands)
  • 1/2 cup of the Dijon Vinaigrette (link to our recipe is on this page)
Cook the chicken low all day in the crockpot with the buffalo sauce.  After 6-8 hours of cooking shred it (kitchen hack is to use your hand mixer to shred).
In a separate bowl, combine the coleslaw, avocado mayo and dijon vinaigrette.  Mix this cold salad together.  Serve with warm buffalo chicken on top of the cold coleslaw.

Shrimp Stir Fry:

  • 1 bag frozen asian caulirice from Trader Joes
  • 1 bag frozen edamame (2 cups)
  • 16oz (20-25 shrimp) of frozen raw shrimp
  • 1/2 cup of broth (no sugar)
  • 2 Tbsp avocado oil (to sauté the shrimp)
Simmer the caulirice and edamame in the broth.  Meanwhile, thaw out the shrimp in a strainer over cold water for about 3 minutes.  Then sauté the shrimp in 2 Tbsp avocado oil (if you’re cutting your oil, you can always steam the shrimp).  When the shrimp is cooked, add it to the caulirice mix!

Lazy Man Mexican Bowl:

Ingredients:
  • 1 lb ground beef
  • 1 bag frozen peppers (I like this one from Trader joes that is fire roasted and has onions)
  • 1 bag Trader Joes Mexican Caulirice (it’s SPICY, so be prepared) or you can use a plain bag
Using a large skillet or saucepan, saute the beef first until about half way cooked (about 4-5 minutes), then add the frozen peppers and caulirice and continue to let simmer until the veggies are well cooked.  Serve in bowls as is or over a bed of greens.

Salmon Bowls:

Ingredients:
For the salmon:
  • 8oz wild caught salmon, 1in cubed
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp garlic powder
  • 1/4 cup soy sauce
  • 1/2 Tbsp coconut aminos (you can sub olive oil)

Let your cubed salmon marinate in the above ingredients for 5-10 minutes while getting the rest of the ingredients ready:

  • Arugula
  • Chopped cucumber
  • Chopped carrots
  • Chopped onions
  • Chopped mango
  • Cubed avocado
Saute the salmon in a skillet for 3 minutes on each side or until golden brown.  Now you’re ready to assemble the bowls with any of your favorite toppings.  Options for toppings:  Japanese Seasoning or the Trader Joes Cold Section Green Goddess Dressing

Homemade Dijon Vinaigrette:

  • 1 cup Avocado Oil or Olive Oil
  • 1/4 cup Apple Cider Vinegar
  • 4 cloves minced garlic
  • 1/4 cup Dijon mustard
  • 1 lemon, juiced
Mix all ingredients together in a glass jar.  Store up to 3 weeks in the fridge.
Yields 16 servings
Each Serving = 2 Tbsp
1 serving would include 1 Tbsp oil

Cabbage Wedges and Steak Bites:

  • 1 head of cabbage
  • 2 Tbsp grass-fed butter, melted
  • Salt to taste
  • 1 pound of steak tips (marinate for at least one hour prior to cooking….longer is even better)
  • Steak Tips Marinade:
    • 2 Tbsp Soy Sauce
    • 2 Tbsp Dijon Mustard
    • 1 tbsp Apple Cider Vinegar
    • Salt and Pepper to taste
  • 1/2 cup of the dijon vinaigrette recipe (posted on this page)
For the cabbage:  preheat the oven to 400 degrees Fahrenheit.  Half the head of cabbage, then quarter it keeping the core intact.  Place the wedges on parchment paper on a baking pan.  Pour the 2 Tbsp of melted butter over top and sprinkle with salt and pepper.  Bake at 400 degrees for 24 minutes, flipping hallway.
Meanwhile, cook the steak bites in the air fryer at 400 degrees Fahrenheit for 8 to 10 minutes, flipping halfway.
When the cabbage is done, drizzle the dijon vinaigrette over top.
Enjoy the meal!

Dill Pickle Chicken Salad

  • 1 1/2 pound chicken
  • 3/4 cup mayo
  • 1 cup chopped celery
  • 1 chopped onion
  • Grillos Fresh Pickle de Gallo or any chopped dill pickles of choice
Cook chicken all day in crock pot. At the end of the day shred chicken using hand mixer. Mix in 3/4 cup of mayo and stir in 1 cup of chopped celery and 1 cup of chopped onion. Then add the secret ingredient; one container of Grillos Fresh Pickle de Gallo from Trader Joes.

Cabbage Roll Soup:

  • 20 oz of bone broth (no sugar)
  • 9 oz of cabbage (or bag of coleslaw mix)
  • 16 oz frozen peppers
  • 1 can tomatoes (no sugar)
  • 1 cup chopped onion
  • 1 cup chopped mushrooms
  • 1 pound of ground beef
  • 1 Tbsp garlic salt
  • 1 Tbsp chili powder
  • 1 Tbsp onion salt
Sauce the ground beef in a pan until cooked thoroughly.  Then add all ingredients to the crockpot and cook on low for 6 – 8 hours.

Egg, Ham and Cheese Cups:

      • Sliced ham (one per egg)
      • Eggs
      • Cheese

Instructions – preheat oven to 400 degrees Fahrenheit.  Use a muffin tin or silicone holders, line each one with a piece of ham.  Then crack an egg in each muffin cup.  Sprinkle cheese over each one.  Then bake for 18 – 20 minutes.  You can easily freeze these for later!

Riced Hearts of Palm with Green Beans and Beef:

  • 2 boxes (1.5 cups) of Riced Hearts of Palm (available at Trader Joe’s or Palmini brand)
  • 2 cups frozen green beans
  • 1 pound ground beef
  • Tbsp Braggs liquid aminos or soy sauce

This is easiest in a 12” electric skillet (link in our Amazon store under IMPACT living).  Saute the ground beef and green beans until about half way cooked and then add the riced hearts of palm and Braggs or Soy Sauce.  Simmer for about 5 minutes.

Tuna Sandwich:

  • 4 oz can of tuna (in water, not oil), drained
  • 2 Tbsp spicy mustard
Drain the tuna and then mix the mustard directly in the can.  Mix it up and add it on top of our high protein impact bread!

Easy Broccoli Salad:

  • 4 cups Broccoli Florets
  • 1 chopped onion
  • 2 tomatoes cut in wedges
  • 1 avocado

Mix 1/4 cup avocado mayo with a splash of apple cider vinegar.

Makes about 8 cups

Mix well and serve
